Vegetable upma
Upma (Uppindi,Uppittu,Kharabath) is an south Indian dish made of Rava. It is a popular breakfast dish across south India.It is usually made with refined wheat grains, which in India generally call suji and is also known in the south of India as rava.There are lots of varieties of Upma like rava upma,vegetable upma,bread upma,poha oats upma,vermicelli upma,semiya upma,aval upma.
Here is the recipe to prepare vegetable Kharabath or vegetable Uppindi.

Instead of frying the sooji wash and soak the wheat for few minutes.

Ingredients
- Rava-1cup
- Onion-1no
- Ginger-Garlic paste-2tsp
- Green chilly-2nos
- Curry leaves-1sprig
- Bengal gram-1tsp
- Urad dal -1tsp
- Cashew nuts-a few
- Oil-3tbsp
- Beans-4nos
- Carrot(Sliced)-3 tbsp
- Potato-1/2 no
- Fresh green peas-4 tbsp
- Cauliflower florets-a few
- Water-1&1/2 cup
- Fry the cashews and keep aside.
- Fry the sooji rava without any oil.
- Heat oil in a pan and splutter the mustard seeds,bengal gram and urad dal.
- Add onion and saute for few minutes.
- Add green chilly,curry leaves and ginger garlic paste.
- When it raw smell disappears add half cooked vegetables,salt and water.
- Add fried rava gradualy when it boils.
- Cover the pan,simmer the stove and cook it for 5to 10 minutes.
- Stir it constantly to avoid formation of lumps.
- Garnish it with fried cashew nuts and serve.
