Chicken cutlet
Cutlet is a very popular recipe.Cutlet specifically refers to cooked meat (mutton, pork, fish and chicken) stuffing that is fried with a batter/covering.
The potato is boiled, mashed and mixed with finely cut green chillies and coriander and salt.The meat is precooked with spices like onion, cardamom, cloves, cinnamon, coriander , green chillies, lemon and salt.
This is then dipped in an egg mix and then in breadcrumbs, and fried in ghee or vegetable oil.
Here is a quick and simple recipe to make Chicken Cutlets.

Ingredients
  1. Ground chicken-500g
  2. Oil-2tbsp
  3. Mustard seeds-1tsp
  4. Onion-2(chopped)
  5. Green chilly-4nos(chopped)
  6. Ginger-1 small piece(chopped)
  7. Garlic-1 pod(chopped)
  8. Curry leaves-a few
  9. Turmeric powder-1/2 tsp
  10. Black pepper powder-1tsp
  11. Chicken masala -2tbsp
  12. Potatoes-3big(cooked and mashed)
  13. Bread crumbs-3cup
  14. Egg beaten-2nos
  15. Oil-for deep fry.
Method

  • Cook the chicken with half of the ingredients from 9 to 11.
  • Mince the chicken and keep side.
  • Heat oil in a pan,splutter the mustard and saute the onion,now add the ingredients from 5 to8 and fry until done.
  • Add the remaining powders(9to11) and fry until raw smell dissappears.
  • Mix it with prepared chicken and mashed potatos,keep it on low flame until the entire water is absorbed.
  • Allow the mixture to cool and prepare it into a big lemon sized ball,flatten it out slowly into a thick patties.
  • Dip each of them in beaten egg and then roll in the bread crumbs.
  • Now deep fry this until golden brown.
  • Serve it with tomato ketchup.

Notes:Dip well each patties in beaten egg to avoid breakage while frying.
         Add steamed vegetables and green peas to the mixture to make it more tasty and healthy.
