MAMBAZHA KALAN
Mangoes are very common in whole world. April-May is usually the mango season in Kerala.It is a very sweet dish.
Ingrediants
1,Mango(fruit) - 2 or 3
2,Curd - 1 cup
3,Coconut - 1 cup(scrapped)
4,Green Chilly - 2to3
5,Cummin Seeds - 1 tsp
6,Chilly powder - 1/2 tsp
7,Turmeric Pwdr - 1/2 tsp
8,Salt- to taste
9,Oil -1 tbsp
10,Mustard Seeds - 1 tbsp
11,Fenugreek seeds - 1 tsp
12,Dry Red chilly - 3
13,Curry Leaves - 2 sprig
Preperation
Peel-off the mangoes by your hands.
Boil water in a vessel with mangoes ,1 sprig of curry leaves, turmeric powder and chilly powder.
Grind coconut, cummin seeds and green chillies into a fine paste.
When the mangoes gets coocked add curd and coconut paeste.
Stir it continuosly and make sure that it never boils.
Fry the ingrediants from 10 to 13 in oil and mix it with mango gravy.
Switch off the flame and stir it for another 2 minutes to make sure that it does not seperste out.
Tips: use 'nattumangha' for better results.
