How to prepare Kozhikode Biriyani, Kozhikodan Biriyani recipe , Malabar Biriyani,Kerala Biriyani.

One of the most well know Kozhikode (Calicut) specialty is the Biriyani.
Kozhikodan Biriyani (Malabar Biiyani) is very fmos even among non-Keralites.


Let us see how to prepare the Malabar Biriyani.Normally Biriyani Chembu (Big cooking utensil) is used to
prepare Biriyani since it is not common and for ease of use we can use presure cooker or even Microwave oven.

Ingredients

1.Biriyani Rice - 1kg
2.Cinnamon (1-inch size) - 5 nos
3.Kismis (dry grapes) - 50gm
4.Cashew Nut -50 gms
5.Ghee - 250g
6.Onion - 4 nos (big)
7.Chicken - 1kg
8.Green chilly - 10 nos
9.Ginger,garlic paeste - 5tbl
10.Lemon juice - 1 lemon
11.Coriander leaves - 3tbl
12.Mint - 3tbls
13.Curry leaves - 2 nos
14.Curd - 1cup
15.Coriander powder - 3tbls
16.Couscous - 2tbls
17.Nutmeg - 1small piece
18.Cardamom - 8nos
19.Cloves - 6nos
20.Sajeera (Caraway seeds) - 1tsp
21.Mace (Malayalam:Jathipatri)- 1tsp
22.Rose water :50 ml
22.Salt - to taste

Preperation

Step1:

    1. 1.Grind the items from 17 to 21 and keep aside.
    2. 2.Cut the onions into thin slices.

Step 2:
    1. Heat the Ghee to fry Kismis,Cashew and half of the sliced onions.Fry it till the colour turns gloden brown.
    2. Add the rice,Cinnamon and little salt(to taste) to a cooker and cook it untill the rice is half cooked.
    3. Filter out water from the half cooked rice.

Step 3:
    1. Fry the other half of the onion in a thick bottomed utensil (Biriyani Chembu) till it gets light brown color.
    2. Add ginger garlic paste and Green chilly to the above onion and heat it for a one minute.
    3. Add sliced Coriander leaves,Mint and curry leaves to the above mix (spread on top of the above mix).
    4. Add the half of the grinded powder (Step 1: 1) to the above mix.
    5. Add curd,lemon extract and salt to it.
    6. Put the chiken pieces ,Coriander powder and Couscous to this and mix it well.
    7. Spread all the above item in the bottom of the cooker.Add half of the half cooked rice on top of it.
    8. Put the fried items in Step 2: (1) and the remaining half of the grinded powder (Step 1: 1) on top of the above mix.
    9. Spread the remaining half cooked rice over he above mix and spread the Ghee on top of this.
    10. Sprinkle the rose water on top.
    11. Cover the vessel with a lid and cover the sides using maida mix to check steam from inside.
    12. Cook it for an hour in very low flame(sim).
    13. Remove the lid and the Biriyaniis ready.
