Kerala Porotta, also known as Porotta, or Malabari paratha, is a made with fine maida, eggs and fat. Here is the recipe and simple step by step procedure to make this delicious flatbread.
Kerala Porotta
In restaurants expertise are preparing porotta by beating the dough well.We can prepare the porotta in our home without this excessive beating.
Ingredients
- Maida – 3 cups
- Dalda – 2 tbsp
- Egg-2nos
- Salt – to taste
- Luke warm Water – as required to prepare the dough
- Baking powder-1/4 tsp
Method
- Mix all the ingredients in a bowl and make the dough just like the dough for chapathy.
- Cover the dough with a wet muslin cloth and keep aside for 4 to 6hours.
- After this make the dough into equal portions just the size of a lemon.
- Apply some oil in a flat surface and roll out the each portions.
- Make it as thin as possible both length wise and width wise(don't worry about the shape).
- spread some oil and sprinkle some maida floure as unique over this.
- Using both hands make pleates on the rolled dough(just like saree pleates)(from one end to other).
- Then hold at one end of the pleated dough and rotate it just like a spiral.
- Again cover it with a wet muslin cloth .
- after sometimes roll out each portion just like roti in medium thickness(do not turned over it while roll out this)
- Cook each one with a little butter/ghee for 2 or 3 minutes.(turn frequently).
- When 4 porottas are ready,place them in a flat surface and holds them between hands and beat the hands together(Just like clapping)
- Now we can serve the taesty homemade kerala porotta with any non-veg or veg curry.
- Tips; use some oil while rollout the dough(don't use any type of flour)
