Egg less Mayonnaise recipe
In the previous post we saw how to prepare Mayonnaise using egg and other ingredients.Now let us prepare egg less  Mayonnaise

Ingredients

  1. Skimmed milk powder-3tbsp
  2. Mustard powder-1/2 tsp
  3. Pepper powder-1/4 tsp
  4. White vinegar or lemon juice-3tbsp
  5. Salad oil-1cup

Method

  • Follow the the same method of mayonnaise recipe with egg.

Note;Use contensed milk instead of milk powder to prepare the mayonnaise

Mayonnaise recipe
How to prepare Mayonnaise ? Mayonnaise also called mayo.Mayonnaise is the base for many chilled sauces and salad dressings.Let us see how to prepare Mayonnaise at home.


Ingredients

  1. Egg-2no
  2. Salt-1/2 tsp
  3. Sugar-1/2 tsp
  4. Mustard powder-1/2 tsp
  5. Pepper powder-1/4 tsp
  6. Lime juice or white vinegar-3tbsp
  7. Salad oil-1&1/2 cup

Method

  • Take the ingredients from 1 to 5 in a cup  of the food processor  and beat at medium speed.
  • Add the salad oil drop by drop(it should be fine and steady stream ) and beat it all the while.
  • Remove the mayonnaise into air tight container and keep it in refrigerator for maximum one week.

Kappa biriyani
Kappa Biriryani or Tapioca Biriyani is one of the most popular dish among Keralites especially in central kerala.It is usually made of Tapioca (kappa) and beef (with bones). It is a kerala style Thattukada speciality. It is as popular as Tapioca and fish curry of Kerala

Ingredients

  1. Tapioca-1 1/2 kg
  2. Beef(with bones)-1kg
  3. Ginger(crushed)-1tbsp
  4. Garlic(crushed)-1tbsp
  5. Sambar onion(sliced)-1cup
  6. Meat masala-3tbsp
  7. Coriander powder-3tbsp
  8. Chilly powder-1tbsp
  9. Pepper powder-2tsp
  10. Curry leaves-3sprig
  11. Coconut-1/2 no
  12. Green chilly-2nos
  13. Turmeric powder-1tspa

Method
  • Mix  the beef with the ingredients from 3 to 10 and cook(5 to 6 vizzle).
  • Cook the tapioca in plenty of water and drain out this.
  • Grind the ingredients from 11 to 13.
  • Mix the tapioca with this paste and pour the cooked meat over it with the gravy.
  • Cover the pan and cook it in medium heat.
  • Remove it from fire when the extra water evaporates.(it should be wet, not dry)
  • Serve it hot.

Tips:Pour some coconut oil in the final stage to make it more tasty.

Chana Dal Vada which is popularly known as Parippu vada in Kerala is a tasty snack made of Channa dal/thuvar dal.Here is how we can prepare the Paripu vada easily.

Ingredients
  • Toor  dal-3cup
  • Ginger-1piece(chopped)
  • Green chilly-3 to 4(chopped)

Method

  • Soak the dal for 2 to 4 hrs and drain properly(otherwise vada will break apart)

    Kerala fish curry
    Kerala fish curry is famous because of it's special spicy nature.Here is how we the recipe to make Kerala Fish curry

    Ingredients

    1. Fish(ayila/Mackerel or ayakura/Seer Fish)-1/2 kg
    2. Coconut oil-3 tbs
    3. Mustard-1 tsp
    4. Sambar onion-10Nos
    5. Ginger-1 piece(2 inch size)
    6. Garlic(sliced)-1tsp
    7. Chilly powder-2 tbsp
    8. kashmiry chilly powder-1tbsp(optional)
    9. Coriander powder-1 tsp
    10. Turmeric powder-1/2 tsp
    11. kudam(ottu) puly-4 nos
    12. Curry leaves-2sprig

    Steps

    • Clean and cut the fish into pieces.
    • Heat oil in a pan and crack the mustard seeds.
    • Add sliced onion and saute it for 2 minutes.
    • Add finely chopped ginger and garlic saute this another 3 minutes.
    • Add the ingredients from 7 to 10.
    • Saute this for few seconds in low flame.
    • Add 3 cup of water and kudam puly to it and mix well.
    • When it get boiled change it to a earthen pot (man-chatty) with the fish pieces.
    • Cook this for 10 to 20 minutes in low flame.

    • Dip it in beaten egg and cover it with bread crumbs.
    • Deep fry it in oil.

    Here is a simple recipe to make Oats cutlet
    Ingredients

    1. White oats-1& 1/2cup
    2. Green peas-1/2 cup(cooked)
    3. Ginger garlic paste-2tbsp
    4. Grated paneer-1/4 cup
    5. Green chilly-3(finely chopped)
    6. Potatoes-3nos
    7. Salt
    8. Oil

    Method
    • Cook the potatoes and mash the same.
    • Soak 1 cup of oats in hot water for 15 minutes.
    • Mix well it with the ingredients 2to7.(it should be a thick batter).
    • Prepare round flat patties with this mixture.
    • Dip it in corn flour paste and then roll it in oats.

    12. Maida paste-1cup
    13. Bread crumbs-3cup
    14. Oil-for deep fry

    Method

    • Cook the vegetables by steaming.
    • Cook and mash the potatoes.
    • Heat oil in a pan and saute the ingredients from 5 to 8 in order which is given.
    • Add the vegetable masala and pepper powder.
    • Add the steamed vegetables,cooked peas and mashed potatoes.
    • Mix it together and cook until the entire water evaporated.(it should be dry)
    • Allow it to cool and make the patties.
    • Dip it in maida paste and then roll in bread crumbs.
    • Deep fry until golden brown.

    Notes:Maida paste-mix the maida,a pinch salt and pepper powder together in water,it should be a thick paste.
              Bread crumbs-grind 3 or more slices of bread in kitchen mixer and fry it in a pan for 2 minutes without any oil.

              Use any vegetables with the mixture as you desired like beet root,spinach,cauliflower etc

      1. Mushroom-200g
      2. Potato-3nos

      7. Garam masala-1tsp

      Method
      • Heat 2tbsp oil in a pan and fry onion,chilly and ginger in order which is given.
      • Add garam masala and pepper powder fry it another few seconds.
      • When its raw smell disappears add mushroom and stir fry until dry and it turned brownish.
      • Mix the mashed potato,salt,amchur powder and cooked peas with this mushroom.
      • Remove it from fire when the entire water absorbed.
      • Allow it to cool and make the patties.
      • Dip each in beaten egg(maida paste) and then roll in bread crumbs.
      • Deep fry until golden brown.

      Tips:Add some bread crumbs to make  the mixture more thickened and it may helps to shapes the patties easily.

      • Make the patties and dip in beaten egg later by roll in bread crumbs.
      • Deep fry until golden brown.

      Cutlet is a very popular recipe.Cutlet specifically refers to cooked meat (mutton, pork, fish and chicken) stuffing that is fried with a batter/covering.
      The potato is boiled, mashed and mixed with finely cut green chillies and coriander and salt.The meat is precooked with spices like onion, cardamom, cloves, cinnamon, coriander , green chillies, lemon and salt.
      This is then dipped in an egg mix and then in breadcrumbs, and fried in ghee or vegetable oil.
      Here is a quick and simple recipe to make Chicken Cutlets.

      Ingredients

      1. Ground chicken-500g
      2. Oil-2tbsp
      3. Mustard seeds-1tsp
      4. Onion-2(chopped)
      5. Green chilly-4nos(chopped)
      6. Ginger-1 small piece(chopped)
      7. Garlic-1 pod(chopped)
      8. Curry leaves-a few
      9. Turmeric powder-1/2 tsp
      10. Black pepper powder-1tsp
      11. Chicken masala -2tbsp
      12. Potatoes-3big(cooked and mashed)
      13. Bread crumbs-3cup
      14. Egg beaten-2nos
      15. Oil-for deep fry.
      Method

      • Cook the chicken with half of the ingredients from 9 to 11.
      • Mince the chicken and keep side.
      • Heat oil in a pan,splutter the mustard and saute the onion,now add the ingredients from 5 to8 and fry until done.
      • Add the remaining powders(9to11) and fry until raw smell dissappears.
      • Mix it with prepared chicken and mashed potatos,keep it on low flame until the entire water is absorbed.
      • Allow the mixture to cool and prepare it into a big lemon sized ball,flatten it out slowly into a thick patties.
      • Dip each of them in beaten egg and then roll in the bread crumbs.
      • Now deep fry this until golden brown.
      • Serve it with tomato ketchup.

      Notes:Dip well each patties in beaten egg to avoid breakage while frying.
               Add steamed vegetables and green peas to the mixture to make it more tasty and healthy.
